Zesty Garlic-Avocado Sandwiches
1 package (8 oz) cream cheese, softened
2 medium ripe avocados, peeled
1 garlic clove, minced
1/8 teaspoon salt
6 whole grain bread or bagels, split and toasted
6 slices tomato
1/2 cup sliced cucumber
6 slices red onion
6 lettuce leaves
In a small bowl, beat the cream cheese, avocados, garlic and salt until smooth. Spread on bread/bagels; top with tomato, cucumber, onion, and lettuce. Yield: 6 servings.
