1 cucumber

2 kiwi fruit

1 Tbsp. rice wine vinegar

1 Tbsp. white balsamic vinegar or

white vinegar

½ tsp. dried dill

½ tsp. white pepper

1 head lettuce

Blueberries for added deliciousness

Slice cucumber very thin. Place cucumber in medium size bowl; add vinegars, dill and white pepper. Let marinate 20 minutes. Peel and slice kiwi. Shred lettuce. Place cucumbers and kiwi over lettuce and serve.
