Orange Glazed Baby Turnips
1 bunch baby turnips, with their greens
2 tablespoons butter
1 teaspoon sugar
1/2 cup fresh orange juice
1 tablespoon grated orange peel
Coarse salt and freshly ground pepper to taste
Remove greens and set aside. Wash roots and leaves thoroughly. Sauté turnips in the butter with the sugar until they are lightly colored. Add orange juice and peel, salt & pepper and cover. Cook 5-10 minutes or until the turnips are tender when tested with a fork. Meanwhile, slice the greens and steam them separately. Arrange the turnips in a bowl with the leaves in a circle around the edges and serve. From nytimes.com, by Moira Hodgson, Jan. 1995.
