Fava Bean Bruschetta
1 cup cooked, peeled Fava Beans, roughly chopped
2 tablespoons of olive oil
sea salt and pepper to taste
2 cloves of garlic, minced
1 teaspoon of chopped rosemary
2 teaspoons of chopped thyme leaves
1 tablespoon of fresh lemon juice
8 slices of toasted Italian bread
In a medium bowl combine Fava Beans, olive oil, garlic, rosemary, thyme, lemon juice and salt and pepper to taste. Spoon mixture on toasted slices of good Italian bread and serve. Mixture may also be stored in airtight container in refrigerator overnight. From www.oceanmist.com.
