Cucumber Salad
1 tablespoons fine-quality dried shrimp
1/4 cup fresh lime juice
1.5 tablespoons sugar
1 tablespoons nam pla (Asian fish sauce; preferably Thai)
1 cucumbers (halved lengthwise and sliced crosswise 1/8 inch thick
1 small shallots, thinly sliced (2 tablespoons)
Finely grind shrimp (if using) in a blender until very fluffy, about 1 minute.
Stir together lime juice, sugar, and fish sauce in a large bowl until sugar is dissolved, then add cucumber and shallot, tossing to coat.
Serve salad sprinkled with dried shrimp.
