Apple-Celery Stuffing
Makes 10 servings (5 cups, sufficient for a 4- to 5-pound bird)
1/4 C butter
1/4 C finely chopped onions
1 C finely chopped, peeled apples
1/2 C finely cut celery
1/2 tsp salt
1/4 tsp pepper
1 tsp poultry seasoning
1/3 C tomato juice, or chicken broth
6 C corn flakes cereal (crushed to 3 cups)
2 C dry bread cubes
2 egg whites
In a medium saucepan, melt butter. Add onions, apples and celery. Cook until tender, but not browned, stirring occasionally. Stir in seasonings. Remove from heat. In a large mixing bowl, combine tomato juice or broth, corn flakes and dry bread cubes. Beat egg whites until stiff but not dry. Fold into cereal mixture together with onion mixture. Mix well. Use mixture for stuffing poultry or fish. From www.organicauthority.com.
