Shallot-Kale Strata
1 loaf of ciabatta (or any type of bread that will fill a 9×13″ pan full of bread cubes)
3 cups whole milk
6 eggs
1 tsp dry mustard
1/8 tsp hot red chili powder
1 shallot, minced
1 bunch kale
Sea salt & fresh ground pepper
1/2 cup cheese, shredded
3 Tbsp butter
Cut the bread into cubes and jam as many as you can into a buttered 9×13″ pan. In a bowl whisk together the eggs, milk, mustard, chili powder, shallot, sea salt and pepper. Pour the mixture over the bread and press down with your hands to get it to soak into all the cubes. Sprinkle cheese and kale over the bread and dot with the butter. Let the strata soak for an hour or place in the fridge to bake-off in the morning. Cook in a 350* oven for one hour. From borninthewrongcentury.com.
