1 1/2 pounds Russian Bananas cut into 1 inch pieces
2 teaspoons salt
2 tablespoons prepared pesto
salt and pepper

Place potatoes and salt in a medium pot and cover in warm water place on high heat, bring to a simmer.  Let simmer until potatoes are fork tender.  Remove from heat, drain off water and place in large skillet over medium high heat coat in pesto and season with salt and pepper.  Cook until potatoes are a browned a bit about 5 minutes. From www.southwindpotatoes.com.
